This wickedly acidic white wine comes from Southern France. To reduce any oxidation, these grapes are picked at night and early morning, then fermented at very low temperature to preserve freshness, minerality, and tart fruit aromas. Fantastic with seafood, but also just a great wine to drink on the patio once the sun starts shining.
