Here Sauvignon Blanc grapes grow on soil rich in calcium and limestone producing wines with perfectly balanced acidity and bearing a prominent flinty, mineral note. “Fume” translates to “smoke” in French and refers to both this flinty aroma, and the whitish bloom that develops on the grapes near harvest that resembles smoke.
