Where Prosecco has dominated the sparkling market, this (vintage!) sparkling wine is made in the Champagne style, or Metodo Classico in Italy. That means lots more yeast influence, giving aromas of brioche and toast. The palate of this cuvee offers some typical brut notes of citrus and pear, but it’s uncommon grapes of Vermentino and Albarola give some herbal and floral notes as well. There’s a wicked streak of minerality in here that gives this wine an overall feeling of tightness. I recommend having this with some soft cheese to loosen it up and have it work as a palate cleanser.
