In 2018 the village of Cairanne was officially recognized for the quality of it’s wines and elevated to be its own AOC, putting it on similar footing as Gigondas or Chateauneuf-du-Pape in the Rhone Valley. Boutinot has opted for six varietals in this wine, hence the name "Les Six”: Grenache, Syrah, Mourvedre, Carignan, Cinsault, and Counoise. All those varietals were
co-fermented allowing this wine to develop great complexity and balance. Pair this with an herb crusted rack of lamb for perfection.
