A stunning Chardonnay from Chile. Grown on volcanic soils just 12km from the ocean, these grapes retain excellent acidity while developing complexity. This wine was fermented in neutral French oak barrels with wild yeasts. 10% underwent malolactic conversion. 90% of the wine was rested for 11 months on lees, while the other 10% remained in neutral foudres. Because the oak use was entirely neutral, it offers just the slightest hint on the nose and palate. This Chardonnay is crisp and refreshing with aromas of apple and lemon, but this also offers whiffs of pineapple and mango. On the palate it is light bodied, but not thin, with some brioche notes and a touch of saline on the finish. Fantastically balanced and complex.
