St. Bernardus began when the monks of St. Sixtus sold their license and recipes to a cheese factory located in Watou, Belgium. Abt 12 is a top-fermented “Quadrupel”, a dark beer showing high alcohol and complexity, with caramel and chocolate notes from the roasted malt and retaining fruity characteristics from specific yeast strains. It is frequently rated as one of the best beers in the world. Try this one with a piece of roquefort or a chocolate if you’re wanting to experience a food pairing.
